Kale & Cabbage Chop Salad with Dijon Dressing

I never used to like kale… or at least I thought I didn’t. Anytime a recipe had kale in it, I would write it off as something I would never enjoy and wouldn’t bother trying it. But my kale belief system has been reversed.  

The first time I tried kale and loved it was in Janet Jacks’ recipe in Discover the Power of Food called Kale with Onions, Garlic & Feta. I dare you to make that recipe and try not to like it! The garlic and onions complement the kale so perfectly, and having it dressed with feta and extra virgin olive oil make it a perfect side dish to enjoy.  

The second time I learned I loved kale? This Kale Chop Salad. It’s so easy to make, and the salad itself has just 4 ingredients—fresh organic kale and cabbage, sunflower seeds, and hemp seeds. That’s it. You might even have all of those items on hand already. The dressing is equally as simple and makes it taste amazing. Who knew I would love kale so much? Maybe you can too!

Try this delicious farm-fresh recipe and fall in love with kale—it’ll make your life so much more delicious!  

Kale Chop Salad  

1 bunch organic kale, finely chopped
2 cups organic cabbage, finely diced (can use red or white or a mixture)
1 cup organic carrot, grated
1/2 cup sunflower seeds (can soak them to increase nutrients)
1/2 cup hemp seeds  

Dressing

1/2 cup red wine vinegar
2 tsp. Dijon mustard
2 tsp. lemon juice
2 Tbsp. tamari
1 cup extra-virgin olive oil
1/4 tsp. kelp flakes  

Dress salad and let marinate 4 hours or overnight. Take out of refrigerator an hour before serving so that olive oil can melt.
