Cold Mountain Kyoto White Miso has about 60% less sodium than regular miso, with plenty of koji to bring out a natural, dessert-like sweetness and a milder flavor. The popular way to use this product is as condiment to give umami flavor.

Cold mountain produces premium miso using organic soybeans. Miso is fermented with koji, which is a Japanese fungus used for fermenting many soy-based Japanese products such as sake and soy sauce.
