Crust
2 cups almond flour
6 Tbsp. coconut sugar, or cane sugar
3 Tbsp. Tapioca flour
Stir together. Add 6 Tbsp. cold butter and combine until crumbly.
Place in a 9x9” pan. Bake at 350 degrees C until golden 8-10 minutes.
While crust is baking whisk filling.
Filling
2 large eggs
1 cup coconut sugar, or cane sugar
1/3 cup lemon juice
2 Tbsp. tapioca flour
Pour over hot crust. Return to oven for 14-18 minutes or until the filling is set.
Remove and let cool completely before cutting into squares.
Tip: Top your sweet squares with a
touch of fresh zest by adding
a small lemon wedge. If you
prefer sweet to sour, try
candying your lemon wedges!
