Turnip & Apple Soup

Food is best when it's shared with others, so make this warm and cozy soup to bring everyone together!

  • 3 cups turnip OR rutabaga, diced
  • 2 cups tart apples, peeled and diced
  • 3 cups carrot, diced
  • 2 cups russet potato, peeled and diced
  • 1 cup onion, diced
  • 1 Tbsp. garlic, chopped
  • 1 Tbsp. butter OR Goodness Me! coconut oil. Find it here!
  • 8 cups water OR chicken stock
  • 1-2 Tbsp. coarse salt
  • 1 Tbsp. tamari. Find a great option here!
  • 1 cup heavy cream or soy milk OR 1 can full-fat coconut milk
  • 2 Tbsp. maple syrup. Here's a great organic option!
  • Black pepper, to season

Place turnip or rutabaga, apples, carrot, potato and onion in stock pot. Add in garlic, butter or coconut oil, salt, tamari and water. Bring to a boil and let simmer until tender. This will take about an hour. If water gets too low, add more. Take out a piece of the turnip (or rutabaga) and make sure it is tender. Puree the soup. Add in the milk and maple syrup. Stir well and season with pepper.
