The Best Shortbread

These cookies are the best for five reasons—five ingredients! With only five ingredients, we always make sure to use ingredients of the highest quality, resulting in the most amazing shortbread we have ever tasted.

Chef's Tip:

  • The great thing about shortbread is it’s the perfect cookie to make with the kids. Because it's essentially a butter cookie it's really hard to overmix. It pats out easily and you can make it into fun shapes.


  • ¾ cup organic cane sugar 
  • 2 ½ cups all-purpose flour  
  • ¾ cup brown rice flour 
  • 1 tsp fine sea salt 
  • 1 ½ cups cold unsalted butter   


  1. Preheat oven to 350°F. 
  2. Add sugar into food processor. Pulse to grind. 
  3. Add flours and salt and then pulse a little more. Add butter cubes and mix to a crumb. Alternatively combine the dry ingredients, whisk briefly then mix softened butter until a dough ball forms.
  4. Move the dough to the counter and knead until it forms a uniform dough ball. 
  5. Roll out to ½" thick and cut to shape of your choice. My go-to shape is circles.
  6. Place onto an ungreased baking sheet and bake 25 to 35 minutes until a pale tan colour.
  7. Cool on the pan for 15 minutes before transferring to a tin or serving platter.
