Recipe: Ice Cream Sandwiches
Treat yourself with these indulgent ice cream sandwiches! Between the homemade, spelt-flour chocolate cookies, put ice cream that's made with organic cane sugar, local, antibiotic-free dairy, and no artificial colours or flavours: Goodness Me!'s new ice cream comes in six delicious flavours and is made with the highest quality ingredients!
Ice Cream Sandwiches (with Cookies made with Spelt Flour!)
- 1 cup unsalted butter
- 1 cup cane sugar
- ½ cup coconut sugar
- 2 eggs
- 1 tsp. vanilla
- Pinch of salt
- 1 cup cocoa powder
- 2 cups light spelt flour
- 1 tsp. baking soda
- 1 tsp. baking powder
Cream butter, cane sugar, coconut sugar, vanilla and eggs. Beat well. Mix dry ingredients together and slowly add into the butter mixture.
Drop ¼ cup dough onto parchment-lined cookie sheet. (I wanted big cookies about 3 inches, so I used just under 1/3 cup). Leave a couple inches in between and flatten with palm of your hand to about ¼ inch thick. Bake at 350°F for 8-10 minutes. Let cool 5-10 minutes and remove to a wire rack. Let cool completely.
To make the sandwiches – take desired amount of your favourite Goodness Me! Ice cream flavor - Just Vanilla, Cocoa Loco, Parlia-Mint, Hunka Chunka Berry Love, Cara-Van, or Gold Rush Ice Cream - and scoop onto parchment-lined cookie sheet. (I used a cup as my cookies were large). Top with parchment paper and squish the ice cream balls to make patties. Freeze until solid, 4 hours or overnight.
Peel the paper off the ice cream and place between 2 cookies. Individually wrap each cookie and freeze until serving time.
