Ingredients:
- 1 cup Farmer's Market organic pumpkin purée
- 1 large organic carrot, peeled and chopped
- 2 small or 1 large organic honeycrisp apple, peeled, cored and chopped
- 1/2 cup Goodness Me! coconut cream
- 1/4 cup cooked quinoa
- 1 tbsp Goodness Me! maple syrup
- 2 tsp cinnamon
- ½ tsp nutmeg
- 1 scoop Nutiva Plant-based Vanilla Protein
- 4 ice cubes
- 1 cup liquid of choice, plus more if needed (water, almond milk, etc)
Method:
- Cook quinoa according to directions, or place it in a small pot with ½ cup water. Bring to a boil, cover, and turn down the heat to simmer. Cook until the grain is tender and all liquid has been absorbed. Allow to cool off for a few minutes before use.
- In a blender, combine all of the ingredients. While blending, add in extra liquid (if needed) until the desired consistency is obtained.
- Garnish with extra coconut cream or Nature’s Path Pumpkin Seed + Flax granola.
