3 Knockout Taco Recipes: Taco Salad, Taco Nachos, Taco Pizza!

We’ve reinvented the taco and made three delicious, game-day-friendly snacks that are easy to make and share. If you love tacos, or nachos, or pizza, you’ll definitely want to try these recipes!  

First on the list for this weekend’s game day recipes: Taco Nachos. These are so easy to assemble and packed with flavour from a variety of toppings. Whether you prefer more avocado, less cheese, or even if you have picky eaters around the table, you can split up the chips onto separate plates and let them make personalized nachos. These nachos have all the fixings of a perfect taco—but on a bed of organic tortilla chips. Ground beef, onion, Mexican seasoning, cheese, tomato, avocado, cilantro—dig in!  

1 bag Neal Brothers blue tortilla chips
1/2 lb. lean organic ground beef
1/2 cup organic white or yellow onion, finely chopped
1 clove organic garlic, finely chopped
1 tbsp. Mexican seasoning or taco seasoning
2 tsp. coarse salt  

In a medium skillet, sauté ground beef with onion and garlic until beef is no longer pink. Add in Mexican seasoning and sea salt. Let simmer on low for 10-15 minutes to let flavours mesh. (The organic beef adds so much flavour to this dish.)

Meanwhile, get toppings ready:  

2 cups raw milk cheddar, grated
1/4 cup organic tomato, finely chopped
1/4 cup organic avocado, finely chopped
1/4 cup organic green onions, finely chopped
1/4 cup organic cilantro, finely chopped  

Cover the bottom of an ovenproof dinner-sized plate with Neal Brother’s blue tortilla chips. Sprinkle a cup of cheese over top. Bake in 350 F oven about 10 minutes or until cheese has melted. Remove from oven. Spoon ground beef mixture over top. Add the remaining cup of raw milk cheddar. Sprinkle tomato, avocado, green onions and cilantro over top. Bake an additional 2-5 minutes. Remove and serve immediately with salsa and sour cream.  

Taco Pizza  
Tacos and pizza – your two favourite dishes finally coming together as one. That’s amore! We love everything about this pizza and after you try it out, you will too! Basically, our favourite nacho toppings are now put on a delicious pizza crust for a flavourful, zesty meal you can pick up and eat without leaving the couch.  

14" pizza crust (of your choice)
1/2 cup Pure Edibles pizza sauce
1/2 cup Neal Brothers salsa
1 organic tomato, chopped
1/2 bunch organic green onions, chopped
1/2 cup organic lettuce, shredded
1 cup cheddar cheese, grated
1/2 cup Neal Brothers tortilla chips, crumbled
1/2 cup Western sour cream, for topping
1/2 cup smashed organic avocado, for topping  

Mix the pizza sauce and salsa together in a bowl, and spoon over pizza crust. Distribute evenly. Sprinkle cheese over sauce, and lettuce, tomatoes, and green onions. Sprinkle crumbled tortilla chips overtop. Place on a pan in the oven at 350°F for 30-40 minutes, or until cheese is bubbling and browning. Remove from oven and let cool for 5-10 minutes. Top with sour cream and avocado if desired, and serve!  

Taco Salad  
This is perfect for those who want to indulge in a little taco-ness, but still get their greens and veggies in. On a bed of romaine lettuce, this salad is packed with black soybeans, cherry tomatoes, avocado, raw milk cheese, and topped with crunchy tortilla chips. It’s an easy way to get fibre and healthy fats into your diet, while still feeling like you’re having a game-day treat.  

1 head organic romaine lettuce, chopped into thin slices (about 4 cups)
1 can black soybeans, drained
1/2 cup organic cilantro, chopped
2 cups organic cherry tomatoes, sliced in half
1 organic avocado, diced
1 1/2 cup shredded raw milk cheese
2 cups Neal Brothers blue tortilla chips, broken up into small pieces  

Dressing  
1/4 cup salsa (mild, medium or hot depending on taste)
Juice of 1 organic lime
1 tsp. Herbamare
3/4 cup extra-virgin olive oil  

Arrange lettuce on a large platter. Sprinkle black soybeans over top, then tomatoes, avocado and cilantro. Drizzle dressing overtop and then sprinkle salad with the cheese and broken up tortilla chips.
