The Best Shortbread Cookies

These cookies are the best for five reasons—five ingredients! With only five ingredients, make sure to use ingredients of the highest quality, resulting in the most amazing shortbread you’ve ever tasted!


  • ¾ cup organic cane sugar 
  • 2 ½ cups all-purpose flour  
  • ¾ cup brown rice flour 
  • 1 tsp fine sea salt 
  • 1 ½ cups cold unsalted butter 


  1. Preheat oven to 350°F. 
  2. Add sugar into food processor. Pulse to grind. 
  3. Add flours and salt and then pulse a little more. Add butter cubes and mix to a crumb. Alternatively, combine the dry ingredients, whisk briefly, then mix in softened butter until a dough ball forms.
  4. Move the dough to the counter and knead until it forms a uniform dough ball. 
  5. Roll out to ½" thick and cut to shape of your choice. Place onto an ungreased baking sheet and bake 25 to 35 minutes until a pale tan colour.
  6. Cool on the pan for 15 minutes before transferring to a tin or serving platter.
