Farm to Table: All About Meyer Harvest

Meyer Natural Foods is proud to partner with Goodness Me!, making Meyer Harvest Beef exclusively available in their Ontario stores. Meyer and Goodness Me! are committed to quality and the Humane Handling of animals.

Our company’s primary principle began over 30 years ago when Bob Meyer set out to produce cattle the right way, the way nature intended. Since our inception in 1990, Meyer Natural Foods has operated with a set of guiding principles in everything we do. These principles lead us to create more mindful products that meet our rigorous standards while providing you and your family with quality beef from brands you can trust. Uncompromising Standards and Exceptional Taste.TM

The Meyer WayTM

We do things The Meyer WayTM. Founder Bob Meyer said “Doing what’s right for our cattle and land is The Meyer Way. When we say natural, we mean truly natural with no compromises. This ethos comes through in the growing process, treatment of the animals, and ultimately produces a superior product. I stand behind this commitment the best way I know – by putting my name on everything we do.”

The Meyer Way guided our commitment to develop a robust Humanely Handled program. The Meyer Natural Foods Humanely Handled program is designed to further strengthen our strict standards for raising and producing cattle and establish a program that farmers and ranchers can use to produce the highest-quality beef in a humane manner. Meyer Natural Foods is committed to providing the highest-quality, best-tasting Meyer Harvest Beef through environmentally sound practices, humane animal treatment, and personal integrity. Our farmers and ranchers follow strict humane handling standards, ensuring each animal is provided the best care. Mr. Meyer created the Humanely Handled Program to establish common-sense standards that reflect its strict guidelines and remain transparent to consumers and those within the food service and grocery retail industries.

It was important to create a thorough, transparent program, so our consumers trust Meyer Natural Foods to provide the highest quality beef. The program focuses on all aspects of the production and development process and requires third-party validation, providing the utmost in transparency and integrity. The Meyer Natural Foods Humanely Handled Program verifies the origins of its cattle and ensures they are born, raised, fed, and processed in accordance with the requirements of the program, as well as CFIA. Cattle are fed a diet of grasses and grains and are raised without the use of added growth hormones or antibiotics.

Trimble Farms – Dave and Adam Trimble

The dedication and love for agriculture and the beef industry stretch far when it comes to the producers who supply beef to Meyer Natural Foods. Meyer Natural Foods sets high standards and only allows for superior suppliers who are phenomenal stewards of their land and their livestock.

Cottam, Ontario, is home to producers Dave and his son Adam Trimble. The father-son duo is a supplier for the Meyer Harvest Beef program. The Trimble family has resided in the same location for many generations and has always been part of agriculture. Dave’s father and uncles originally owned and operated a dairy and crop farm. The Trimble family eventually decided to sell the dairy cattle and focus on farming.

Dave acquired the family operation and continued farming for years until Adam began running the cattle feeding program. From the beginning, Dave and Adam chose to raise their cattle naturally. They started by purchasing calves from a cow/calf supplier who lived down the road. They started feeding black Angus cattle and loved the growth and performance they were getting. Today, those same standards still apply to their now 300 head feeding operation.

The Trimble family purchases feeder cattle at about 600-700 lbs. Adam works directly with cow/calf suppliers he trusts instead of going through auction market systems. When purchasing calves, Adam looks for deep-bodied high performing Angus cattle. Cattle are placed on a step-up feed program uniquely developed by a nutritionist. Adam meets with the nutritionist a couple of times a month to check on the performance of the cattle and see what changes need to be made to accommodate the best overall development of his livestock.

Dave and Adam also supply all the feed for their cattle. They farm about 1,400 acres where they grow wheat, soybeans, and corn. Once crops are harvested, the nutritionist comes in and builds the cattle’s feed rations based on the crops grown that year. Adam also adds in distillers’ grain which he purchases from a local ethanol plant. A mineral pack is also added to the rations to help keep cattle on track for harvest.

When Adam is not busy feeding cattle, he is spending time with his wife Sydney. They both love agriculture and grew up in 4-H, learning and sharing the same values. Adam and Sydney know how diligence and hard work pay off. They are thriving in their cattle feeding endeavor and Meyer is grateful for the relationship that has been built and for their partnership for years to come.

Preheat oven to 450F

For Balsamic Reduction:

  1. In a small saucepan, combine wine, balsamic vinegar, and brown sugar.
  2. Stir to combine. Heat over medium high heat until boiling, then reduce to a simmer. Continue cooking until sauce is reduced by about half. It will become thicker and more like a syrup.

TO PREPARE STEAKS:

  1. Drizzle olive oil (2 tablespoons between all four steaks) on and massage into each steak. Top with garlic, sea salt, and rosemary. Place steaks in a resealable bag and allow to marinate for at least 30 minutes.
  2. When you’re ready to cook the steaks, heat a large skillet over high heat for about 4-5 minutes. Add the remaining
  3. 2 tablespoons olive oil to the pan and add the steaks immediately.
  4. Sear each side for 1 1/2 minutes. When each side has been seared, place pan in the oven for approximately 4-5 minutes. If you prefer your steak more rare, about 4 minutes is perfect. Remove from the oven and allow to rest for 5 minutes before slicing. Slice steak and top with Red Wine Balsamic Reduction.
