Mix almond flour, baking powder and baking soda well and pour into a 1L mason jar. Pat down this mixture. Next, add the coconut sugar, then the coconut, and lastly the chocolate chunks.
Include a little card with the jar that say: Cream 1/2 cup softened butter and 1 large egg in mixing bowl. Add contents of mason jar and mix together well. Drop by teaspoonfuls onto parchment-lined cookie sheet. Leave some room in between the cookies. Bake at 350°F for 12 - 15 minutes or until cookies are golden. Let cool completely before removing from cookie sheet.
