This flavourful soup is a fresh punch to your pallet! Enjoy the taste of cauliflower, squash, and roasted red pepper. Top it with some fresh basil for an extra pop!
Place everything in a stock pot except for the coconut cream. Bring to a boil and let simmer about a half an hour, or until vegetables are tender. Puree and add in coconut cream. Adjust seasonings.
