Out-for-Lunch Waldorf Salad with Apples & Pecans

Holistic Nutritionist Jesse Lane shares her healthy twist on a classic Waldorf Salad. Check it out - perfect for lunches on the patio or get togethers with friends! 

Out-for-lunch waldorf salad reminds me of getting all dressed up and going out for a nice lunch with my girlfriends. The health benefits of the ingredients leave you feeling light and refreshed, while satiating your salad cravings. I always loved Waldorf salad growing up, however my stomach was not always a fan of the creamy dressing, so I decided to make a healthy, mayo-free version that all can enjoy. The creamy honey dressing tastes so good with the tart apples and crunchy celery, and the best part is that it can be made in under 15 minutes!

Out-for-lunch Waldorf Salad by Jesse Lane Wellness
(mayo free, gluten free, nightshade free)
Prep time: 15 minutes | Serving size: 2 large salads or 4 side salads

Ingredients

10 cups of mixed organic leafy greens (5 oz box)
Two organic Macintosh apples, diced
Four stalks for organic celery, diced
2 cups of organic grapes, halved
1 cup of toasted pecans

Creamy Honey Dressing:

1/4 cup olive oil
1 Tbsp plain organic yogurt
1/2 Tbsp honey
2 Tbsp lemon juice
Salt and pepper to taste 

Directions:

Whisk or shake Creamy Honey Dressing ingredients together in a small bowl or jar and set aside. Place lettuce in a large bowl and toss with dressing. Top with the diced apples, celery, grapes and toasted pecans and serve the Out-for-lunch Waldorf Salad.
