I never used to like kale… or at least I thought I didn’t. Anytime a recipe had kale in it, I would write it off as something I would never enjoy and wouldn’t bother trying it. But my kale belief system has been reversed.
The first time I tried kale and loved it was in Janet Jacks’ recipe in Discover the Power of Food called Kale with Onions, Garlic & Feta. I dare you to make that recipe and try not to like it! The garlic and onions complement the kale so perfectly, and having it dressed with feta and extra virgin olive oil make it a perfect side dish to enjoy.
The second time I learned I loved kale? This Kale Chop Salad. It’s so easy to make, and the salad itself has just 4 ingredients—fresh organic kale and cabbage, sunflower seeds, and hemp seeds. That’s it. You might even have all of those items on hand already. The dressing is equally as simple and makes it taste amazing. Who knew I would love kale so much? Maybe you can too!
Plus, did you know that Goodness Me! has their very own farm that provides fresh, organic, local kale to our stores? It’s hands-down the best kale you’ll eat, and you can feel good knowing you’re supporting our two local farmers in their endeavour to spread the goodness of organics everywhere. We might even have some Goodness Me! farm cabbage in stores, too!
Enjoying farm-fresh produce (from organic farms) adds so many nutrients and minerals into your diet. And eating this salad will put two very vibrant coloured produce items on your plate—and we all know how important it is to eat our colours. For example, blue and purple fruits and vegetables (like the purple cabbage in this recipe) help maintain a healthy urinary tract, vision, memory function, and healthy aging. Green veggies help maintain liver health, strong healthy bones, and vision health. Plus, kale has powerful antioxidants with anti-inflammatory properties, has the highest ORAC value of all vegetables, is high in beta carotene, vitamin K & C, and lutein, and contains calcium, iron, protein, and fibre. It also helps you detoxify! Do we really need more reasons to love it?
Try this delicious farm-fresh recipe and fall in love with kale—it’ll make your life so much more delicious!
