These kid-approved, healthy cucumber stacks use only organic cucumber, organic tomato and creamy goat cheese. You’ll love how easy these stacks are to assemble and feel even better about putting them in your children’s lunches. It’s a simple way to make sure the whole family is getting in their healthy serving of veggies!
8 slices organic cucumber (about ¼”)
softened Woolwich chèvre
1 organic vine tomato (optional)
fresh organic dill
Smear chèvre over 4 slices organic cucumber. Add tomato, if using. Top with the other slice of cucumber. Continue to stack as desired. Top cucumber stacks with a sprig of dill.
