Quick & Easy Broccoli & Cheddar Egg Poppers

The perfect ‘make ahead’ breakfast for those busy weekday mornings! High in protein and vitamin C, these will fill you up and give you energy to burn throughout the day. Using organic broccoli and an old cheddar cheese, you will pack these poppers with extra crunch and flavour. Enjoy these with a fresh piece of fruit - savory and sweet, the perfect combination!  


6 large organic eggs
½ cup soymilk or cream
½ cup organic white onion, grated
1 tsp organic garlic, grated
½ tsp Herbamare
2 cups organic broccoli florets, finely chopped
1 cup cheddar cheese, shredded

Boil or steam broccoli until tender. Drain well and let cool. Beat eggs until thick. Beat in cream or milk, onion, garlic and Herbamare. Stir in cooled broccoli and cheese and mix well. Pour into greased muffin tins or greased mini muffin tins. (Grease with camelina oil or melted coconut oil.) Bake at 350˚F (25 minutes for regular size muffin tin, 15 minutes for mini muffin tins or until golden). Let sit 5-10 minutes before removing from pan.
