When making these, be sure to use free range or organic eggs to ensure the best quality and taste - you and your guests will notice the difference!
1 Tbsp organic kale, finely chopped
1 Tbsp organic sweet potato, peeled and finely grated
1 Tbsp McLean’s bacon, crumbled (optional)
1 free range or organic egg
Herbamare to taste
1 Tbsp cheese, grated (optional)
Grease ramekin with butter or coconut oil. Place kale at the bottom of the ramekin. Top with sweet potato and bacon if using. Crack the egg on top and season with Herbamare. Sprinkle cheese on top if using. Bake at 350˚F for 18 minutes.
