8 ripe organic tomatoes, roughly chopped
1 organic cucumber, diced (peel if skin is tough)
2 organic red peppers, seeded and diced
1/2 organic red onion, peeled and diced
1 cup organic celery, chopped
2 cloves organic garlic, chopped
1 cup organic parsley, chopped
1/2 cup organic basil, chopped
2 Tbsp. extra virgin oil
2 Tbsp. balsamic vinegar
1 Tbsp. raw honey
2-3 tsp coarse salt
Place the tomatoes in food processor bowl and pureé. Add remaining vegetables and herbs and process. Add in the oil, vinegar, honey and salt. Taste and adjust seasonings. Let chill about an hour before serving. Garnish with a slice of tomato topped with a fresh basil leaf.
