1 lb. lean ground beef
1/2 cup organic onion, finely chopped
1/2 cup organic carrot, finely chopped
1/2 cup frozen organic peas
1 tsp. coarse salt
1 clove organic garlic, finely chopped
1/2 cup water or beef stock
1/2 cup ground chia
1 medium-sized head organic cauliflower, chopped
1 tsp. butter
1/2 tsp. Herbamare
1/2 cup white cheddar (optional)
In a small saucepan, boil carrots about 5 minutes or until soft. Add in peas. Stir and turn off stove. Sauté ground beef in frying pan. Add in onion, garlic, and salt. Chop up beef with spoon so that it is very fine. Stir until beef in so longer pink. Add in beef stock or water and cooked peas and carrots and let simmer for about 20 minutes. Add in the ground Chia and stir will. Meat mixture should thicken up. Remove mixture to a 9x9 inch baking dish. Boil cauliflower until tender. Drain and pour into food processor bowl. Add Herbamare, egg, and butter and process until smooth. Add cheese if using and process again. Pour cauliflower mixture overtop of the beef mixture. Bake uncovered 30 minutes in 350°F oven.
