Quick & Easy Bacon and Egg Cups

Quick & Easy Bacon and Egg Cups

A quick and easy breakfast that is great for on the go.  
4 slices gluten free bread
2 slices organic bacon, fried for 3 minutes
4 eggs
4 tbsp. grated cheese
little herbamare
melted butter
(makes 4)

 

Cut crusts off bread.  Lightly flatten with a rolling pin.  Brush 4 muffin cups with butter.  Gently press the bread into the muffin cup.  Brush with melted butter.  Bake at 350°F for 5 minutes and remove from oven.  Chop bacon. Place 1/4 tbsp. cheese in bottom of muffin cup.  Sprinkle with1/4 of the chopped bacon.  Crack open an egg on top.  Sprinkle with remaining cheese.  Bake for 15 minutes or until egg is set.  Serve.
