Fibre- & Fat-Rich Flaxseed Pancakes
Now you can enjoy pancakes in the morning - without the bloating or the guilt. These pancakes are made with spelt flour and flax seeds for nutritional benefits, and taste great with maple syrup and fresh fruit.
1 cup light spelt flour
1 cup dark spelt flour
2 tsp. baking powder
1 tsp. cinnamon
1/3 cup ground flax seeds
2 cups milk/soy milk
1 tsp. vanilla
1 tbsp. melted butter
1/4 cup flax seeds
Mix dry ingredients together. Combine milk, eggs, and vanilla. Add to dry ingredients. Stir until just blended. Add flax seeds and butter. Melt a little coconut oil or butter onto hot skillet before making the pancakes. Serve with pure maple syrup and top with chopped fruit if desired. Enjoy!
