3 medium organic zucchini, sliced into skinny sticks
2 egg whites, beaten
1/2 cup gluten free breadcrumbs
3 tbsp. grated parmesan cheese
Herbamare, to taste
Optional: pinch of garlic powder, cayenne pepper, or chilli powder, to create your own preference!
Beat egg whites with a fork until frothy. Mix the breadcrumbs, parmasan cheese, and Herbamare in a bowl until well blended. Add any other seasonings or spices you would like, to create your own unique version. Coat zucchini sticks well in egg, and dip in breadcrumb mixture til well covered. Line the zucchini fries on a cookie sheet, and bake at 350F for 20-25 minutes or until golden brown and crispy. Enjoy!
