4 Mark's Turkey Sausage (casings removed)
1 organic onion, finely chopped
2 cloves finely chopped organic garlic
1 can Eden black soybeans, drained
1 cup salsa
2 cups Monterey Jack cheese, grated
1/3 cup chopped organic black olives
1/3 cup chopped organic green onion
Sauté sausage, onion and garlic over medium heat, breaking up sausage into tiny pieces. Mash beans slightly and add to sausage mixture. Add salsa to the sausage mixture. In a separate bowl, combine grated cheese, olives and green onions. Add half the cheese mixture to the sausage. Pour into a baking dish and top with remaining cheese mixture. Bake in a 350°F oven for 30-40 minutes or until cheese is bubbling. Use tortilla chips as dippers.
