Vegetarian Stir Fry with Thai Peanut Sauce
For a light dinner that's easy to throw together and delicious for anyone, try this vegetarian stir fry. You can use the combnation of veggies below, or any combo you have in your fridge, and enjoy the medley of flavours.
1 organic broccoli, chopped into florets
3 organic carrots, sliced
1 organic red pepper, sliced
1 organic onion, diced
1 package tofu, cubed
1/2 jar Thai Kitchen Peanut Sauce
2 tsp brown sesame seeds
1 tsp extra virgin olive oil
Add extra virgin olive oil to wok and turn to medium heat. Add broccoli, carrots, red pepper, onion, and tofu and sauté for 10 minutes, or until tender. Stir in Thai Kitchen Peanut Sauce until fully heated. Remove and add sea salt and pepper to taste. Top with sesame seeds. Serve.
