1/4 cup fresh organic lime juice
Grated peel of organic lime
2 cloves organic garlic, finely minced
2 tbsp. tamari
2 tbsp. camelina oil
1 tsp. cumin
1 tsp. chili powder
1/4 tsp. cayenne
2 tbsp. honey or agave nectar
2 tbsp. cilantro, finely chopped
24 shrimp or 1 1/2 lbs.
wooden skewers or bamboo skewers
Combine marinade - everything except the shrimp. Peel and devein the shrimp (except tail). Pat dry. Place shrimp and marinade in a glass container with tight fitting lid. Shake well. Refrigerate for up to twenty minutes. Preheat grill to medium high. Grill shrimp on oiled grill two minutes per side or until opaque. Remove to platter and garnish with wedges of lime and cilantro.
