Garlic & Ginger Chicken Mango Stir Fry

A whole new way to use mango - for dinner! This original dish combines free range chicken with tangy mangos, sweet red peppers, and a variety of herbs and seasonings for the perfect combination that your family will love.

 

2 boneless, skinless chicken breasts
1 bunch organic green onions, cut on an angle
1' piece ginger, minced
2 cloves chopped garlic
1 organic red pepper, cut into strips
2 organic mangoes, skinned and cut into chunks
2 tbsp. coconut oil
1/4 cup arrowroot flour
Herbamare
Pepper
2 tbsp. Tamari
1 cup water  

Cut chicken into bite-sized pieces and coat with arrowroot flour, Herbamare, and pepper. Spoon coconut oil into wok or pan over medium heat. Add ginger, green onion, and garlic. Saute a couple of minutes and add chicken. Add water as needed and stir in vegetables and tamari. When the vegetables are tender, stir in the mango and serve.
