450g lean ground turkey (or beef)
1 tbsp. grape seed oil
1 tsp. rice vinegar
1 tbsp. tamari sauce
1 tbsp. hot chili sauce (or hot sauce)
1/3 cup chopped organic green onion
1/3 cup chopped organic cilantro
8 leaves organic romaine lettuce
1 cup julienned organic carrots
1/2 cup thinly sliced organic cucumbers
1/3 cup coarsely chopped unsalted cashews
Thai Kitchen Sweet Red Chili Sauce
Heat the grape seed oil in a skillet on medium-high heat. Add turkey and cook until there is no pink in the meat. Turn heat off. Add in the remaining ingredients except for the carrots, cucumber, and cashews. Toss to combine. Spoon onto each lettuce leaf and top with carrots, cucumbers, and cashews. Dip in Thai chili sauce or drizzle on top. Enjoy!
