3 medium organic zucchini (courgette), diced
1 organic eggplant (aubergine), cubed
6 medium organic tomatoes, diced
2 green organic peppers, chopped
2 organic onions, chopped
2 organic garlic cloves, finely chopped
1/2 cup olive oil
1 bay leaf
1 tsp. coarse grey sea salt
few grinds of fresh pepper
1 tsp. Herbes de Provence
Sauté onion in olive oil over medium heat. Add in garlic when onion is softened. Add remaining ingredients. Place ingredients in a slowcooker. Cook on LOW for 4 hours.
