Santa Fe Cajun Chicken with Avocado Relish

Santa Fe Cajun Chicken with Avocado Relish

This is not your average grilled chicken. Served with Avocado Relish, it will soon become a summertime favourite.

4 boneless chicken breasts (you can use boneless thighs instead)
1/4 cup melted coconut oil
2 tbsp. organic garlic, chopped
1 tbsp. Cajun Spice Mix (see below)

Cajun Spice Mix

2 tbsp. Herbamare
1 tbsp. chili powder
1 tbsp. sweet paprika
1 tsp. onion powder
1 tsp. garlic powder
1 tsp. basil
1 tsp. oregano
1/2 tsp. thyme
1/2 tsp. cumin
1/4 tsp. cayenne (or more if desired)  

Avocado Relish

2 organic avocados, peeled, pitted, and finely diced
1/4 cup organic Stahlbush corn kernels, thawed
1 organic tomato, chopped finely
1/4 cup finely chopped organic green onion
1/4 cup finely chopped organic cilantro
1 cup black soybeans  


1/2 cup extra-virgin olive oil
1/4 cup fresh lime juice
2 tbsp. salsa
1 tbsp. agave nectar
1/2 tsp. Herbamare  

Mix ingredients together and allow to marinate 4 hours or overnight.  Bake at 350°F for 20 minutes or grill.  Place grilled chicken pieces on platter.  Top each piece with a good amount of avocado relish.  Drizzle with dressing.

Avocado Relish Combine chopped ingredients and place in a bowl.
