Chickpea and Tomato Salad with Balsamic Lemon Dressing
Great as a side dish or a snack!
2 cups cooked chickpeas
1 container organic cherry tomatoes, cut in half
1/2 cup finely chopped organic red onion
1/2 cup finely chopped organic cucumber
1 cup feta cheese, crumbled
1/3 cup finely chopped organic basil
1/4 cup balsamic vinegar
1 Tbsp. fresh lemon juice
1/3 cup extra virgin olive oil
1 tsp. Herbamare
Combine chickpeas, tomatoes, onion, cheese, cucumber and basil in salad bowl. Mix together salad dressing and pour over salad. Enjoy!
